Recipe: Dairy Free & Gluten Free Mocha Truffles – VIP #12

The word is “Fika” and it basically means “Sit down, relax, have a coffee and a treat” (usually a delicious, Swedish cinnamon bun). Do I have to tell you it’s my favourite word? “Fika” is something us Swedes do multiple times per day, which can very easily lead to an over consumption of calories. Let’s just say those cinnamon buns aren’t exactly low in calories (read: What are calories?) If you are like me and like to have a break to wind down, have a chat with a friend and just take a moment to relax and enjoy life, you’re going to love these mocha truffles. I LOVE chocolate and I also LOVE coffee, so these super easy mocha truffles are perfect for anyone who is like me and has a sweet tooth, but would like a healthier alternative for a snack - one that also gives you a slight energy kick thanks to the coffee. Did you know that dark chocolate is high in beneficial vitamins, antioxidants, and minerals and that there is some research that suggests that coffee could potentially prevent the onset of many diseases? Talk about a powerball! These balls are perfect as an afternoon snack to satisfy sugar cravings and give you that little boost of energy you need when it hits 3 o’clock and you feel like a nap, or if you just want a “fika” with a friend. The problem with most bliss balls is that they’re really low in protein and high in fat, some of them are even higher in calories than your average chocolate bar! This is why you need to make it a habit to always read the labels before you buy things and make sure you eat according to your goals. I’m not saying that fat is bad for you, because fat is essential for many bodily functions and to ensure we have a healthy hormone production, but fat is also very calorie dense (9cal/1g) which is why it’s so easy to over-consume. This is a big problem with people who think they eat healthy. They don’t realise just how many calories they’re consuming and that just because something is from the health food isle doesn’t automatically mean it’s low in calories. A few bliss balls per day might be the reason you’re not losing weight! This recipe is from my ‘Low Carb’ book and it makes around 10 balls. Enjoy! Nutrition Per Serving 7 grams of fat 7 grams of carbohydrates 2 grams of protein 103 calories. That's it. That's all there is. Ingredients 3 oz. (100g) of dark chocolate, 70-80% 1/3 cup (80ml) of full fat coconut milk 2 tbsp. coconut sugar 2 tbsp. instant coffee (preferably a good brand) 2 tbsp. almond butter Pinch sea salt 2 tbsp. cocoa powder to dust with I recommend using Lindt dark chocolate. Directions For The Dairy Free Mocha Truffles Mix everything together in a blender (NutriBullet works wonders) and then take the mixture out and put it in a tray of some kind (any that will fit). Place a layer of cling wrap over the tray and chill the mixture in the fridge for about 2 hours, until it’s firm. This will prevent a skin from forming over it. When it's ready to come out, lightly dust a clean surface with cacao powder and roll a spoonful of the mixture in it. Keep doing this, shaping each one into balls and then serve them at room temperature. Store any that you don't demolish immediately in the fridge. P.s. If you don’t like coffee you can just leave it out and roll the balls in shredded coconut instead to get some more flavour. Elin
